CRISPY COATED CHICKEN
2 slices of bread
1 tablespoon Italian herbs or fresh parsley
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 - 1/2 cup grated Parmesan
1 egg
6 chicken drumsticks
1. Preheat oven to 180°C.
2. Place bread into a blender and blitz until a breadcrumb consistency.
3. Tip breadcrumbs onto a plate and mix in the herbs, salt + pepper & Parmesan.
4. Whisk the egg on a separate plate.
5. Coat each drumstick in egg and then roll in the breadcrumb mix until completely covered. Place in a lined tray.
6. Spray the top side with olive oil and place in the oven. Halfway through turn the chicken over and spray the other side. Cook for around 45mins, until crispy, golden and cooked through.
Serve with gravy, mashed potatoes and some steamed or roasted veg!
